Cheesecake Thingies

This recipe originally came from my sister-in-law who passed it on to my mom who just recently passed it on to me.  I'm unsure of the real name so I'm calling them Cheesecake Thingies.  They are incredibly dangerous because if they are in your house you may have one for breakfast (just a guess) and if you bring them to a function you will then be expected to bring them every single time.

Cheesecake Thingies

2 1/2 cups flour
2/3 cups finely chopped pecans
2 tablespoons powdered sugar
1 cup melted butter

3 eight oz. cream cheese, softened
4 eggs
1 14oz. can sweetened condensed milk
2/3 cups sugar
2 teaspoons vanilla

1 cup brown sugar
1 cup whipping cream
1 cup chopped pecans
1 teaspoon vanilla

1) Combine first four ingredients. Press mixture into bottom of an ungreased 13x9 pan. Bake at 350* for 15-20 minutes or until crust is set and lightly browned around the edges.





2) Beat cream cheese with electric mixer on low until smooth. Add eggs and beat well. Beat in condensed milk, sugar and vanilla. Pour mixture over crust. Bake for 35-40 mins. at 350*  Cool.



3) TOPPING: In medium saucepan combine brown sugar and whipping cream. Cook and stir over medium heat until mixture boils, reduce heat and simmer for 10 minutes uncovered.



4) Stir in 1 cup chopped pecans and vanilla. Pour topping over cheesecake. Cover and chill for 2-24 hrs.



5) When set, cut into small pieces .

  1. Just brought an empty pan back home after making them for a teacher' b'day today. They are called Cheesecake Bites as one is supposed to cut them into small pieces. Yeah, right!
